Roasted Vegetable Enchiladas

This recipe serves about 6.



Ingredients:

  • 2 yellow onions, quartered and cut into 1/2" strips
  • 2 red onions, quartered and cut into 1/2" strips
  • 2 green bell peppers, quartered and cut into 1/2" strips
  • 2 red bell peppers, quartered and cut into 1/2" strips
  • 3 japanese eggplants, halved lengthwise and cut into 3/8" pieces
  • 5 zucchini, halved lengthwise and cut into 3/8" pieces
  • 1 large sweet potato, cut into 3/8" cubes
  • Olive oil for roasting and coating the pan
  • Chili powder, to taste
  • Salt and pepper
  • 1 22 oz. can enchilada sauce
  • 10 flour tortillas
  • Jack and/or cheddar cheese, to taste

Directions:

  • Spray or toss onions, bell peppers, zucchini and eggplant with olive oil and roast in a 450-degree oven until caramelized and very tender.
  • Toss sweet potato with olive oil and chili powder and roast in a 450-degree oven until browned and very tender.
  • Mix all roasted vegetables together in a large bowl and allow to cool slightly.
  • Add 2/3 of the enchilada sauce to vegetables and stir to coat.
  • Season with salt and pepper.
  • Spray or rub a small amount of olive oil on the bottom and insides of a 9" x 13" pan.
  • Place 5 of the tortillas in the bottom of pan.
  • Add vegetable mixture to pan in an even layer.
  • Top with remaining tortillas, sauce and cheese.
  • Bake at 350-degrees for 20-30 minutes, or until cheese is browned and bubbly.
