Cucumber Salad
Serves 3.
A super-easy, refreshing salad for hot summer days.
Mix together:
- 1 English cucumber, cubed. If you can't get an English cucumber, you can use a couple of regular ones peel and seed those, though.
- 3 T. rice vinegar
- 2 tsp. tamari or soy sauce
- 1/2 tsp. kosher salt (use less if you're using regular or sea salt)
- 1/2 tsp. sesame oil
- 1 tsp. toasted sesame seeds
If desired, add:
- Up to 1 tsp. sugar
- 1/4 of a red onion, diced
- 1/2 tsp. crushed red pepper
Directions:
- Toss ingredients together in a non-metallic bowl, and allow them to sit for at least 15 minutes before serving. Can sit for up to 1 hour.
