Thai Pasta Salad
Now that it's BBQ season again, I wanted to create a few great recipes for side dishes that I'd be able to bring along.
Ingredients and method:
Stir-fry together for 5 minutes, or until softened:
1 T oil
1 red onion, diced
1 cup shredded carrot
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 chinese eggplant, diced
Then add:
1 bunch of asparagus, roasted and cut into 1" pieces
Add sauce, made by mixing together:
2 T rice vinegar
2 T fish sauce
1 T tamari or soy sauce
2 tsp. chili paste, such as Sriracha
1/4 c. fresh squeezed lime juice
1/3 c. chicken or vegetable broth
1/4 tsp. white pepper (black works as well)
Then add noodles. You can use pancit canton noodles, rice noodles, chinese chow mein noodles or even spaghetti. If using pancit noodles, add them to the mixture and allow them to steam. If using any other noodles, prepare them according to package directions and then add to the vegetables and sauce.
Garnish with green onions and serve!
