Chicken and Pasta with Zucchini, Tomato and Lemon Sauce
Serves 4.
Ingredients:
- 1 onion, diced
- 2 cloves garlic, minced
- pinch of red chili flake
- 1/2 tsp. of italian herb blend
- 4-5 chicken thighs or 3 chicken breasts, cubed
- 3 zucchini, chopped
- juice of 2 lemons
- 1/2 cup water or chicken broth
- 1 14 oz. can of diced tomatoes
- 1 14 oz. can of canellini beans
- 1 1/2 cups coooked pasta (spirals, shells or tube shapes work well)
Directions:
- Saute onion on high heat for 2 minutes, add garlic and saute for a few more seconds.
- Add chili, herbs and chickencook for 3 more minutes.
- Add zucchini, cook 1 minute or until slightly tender.
- Add lemon juice and water or broth, and canned tomatoes. Cook 4 minutes.
- Add beans and cooked pastacook 1 more minute or until beans are warm.
Serve with parmesean cheese.
