Judi's Mexican Chicken Casserole
Serves 4.
Ingredients:
- 6-10 flour tortillas, torn into strips
- 1 large can vegetarian refried beans
- 1 large can green enchilada sauce
- 4 pieces chicken (cooked and cubed breasts will cut preparation time)
- 1/2 cup shredded jack and cheddar cheese
- 1/2 cup sour cream (optional)
Directions:
- If you are not using cooked chicken, place chicken pieces in a 9x13 glass casserole dish.
- Bake at 375 degrees for 20 minutes.
- Remove chicken from pan.
- Coat bottom of pan lightly with enchilada sauce.
- Assemble casserole in layers as follows: tortillas, beans, chicken, 3/4 of the can of sauce, tortillas, and the rest of the sauce.
- Bake at 375 for 25-30 minutes, or until chicken is cooked through.
- Cover casserole with cheese and sour cream, if desired.
- Bake an additional 7-10 minutes, or until cheese is melted.
Serve over spanish rice, if desired. Is quite tasty with salsa.
