Chicken Baked with Black Beans
Chicken baked with black beans and fajita-style vegetables.
Serves 3
Spice Mix:
- 1 teaspoon each granulated garlic, cumin, coriander, and black pepper
- 1/4 teaspoon crushed red pepper
Other Ingredients:
- 3-4 pieces of chicken (I use boneless, skinless breasts and thighs)
- 1 small onion, coarsely chopped
- 1 chopped red bell pepper or a handful of frozen mixed bell peppers (optional)
- 1/2 can corn, rinsed and drained (optional)
- 1/2 c. chicken broth
- 1 can black beans, drained and rinsed
- 7 oz. red enchilada sauce
- 1/2 jar salsa
- Cheddar cheese, to taste (optional)
Directions:
- Sprinkle spice mix on both sides of chicken pieces, and place chicken in a glass baking dish.
- Bake chicken at 375 for 15-20 min.
- Add onions, bell pepper, corn and chicken broth.
- Bake at 400 for 15 min.
- Add black beans, enchilada sauce and salsa.
- Stir, and bake for an additional 15-20 min.
- Add cheese, if using, and bake until melted.
Serve with spanish rice and flour tortillas.
