Balsamic Chicken
Serves 2
Ingredients:
- 1 small onion, coarsely chopped
- 3-5 cloves garlic, smashed and roughly chopped
- Olive oil
- 2 boneless, skinless chicken breasts
- Balsamic vinegar, to taste (I use about 1/2 cup)
- 1 large can (28 oz.) diced tomatoes
- 1 teaspoon Italian herbs
- 1 basket (8 oz.) sliced mushrooms (optional)
- 1 sliced green, yellow or red bell pepper (optional)
- 2-3 sliced zucchini (optional)
Directions:
- Saute onion and garlic in olive oil in a large frying or saute pan until onion is translucent. Be careful to not let the garlic burn.
- Add chicken and continue to saute until chicken is mostly cooked through and slightly browned.
- Add vinegar, tomatoes, herbs, mushrooms and bell pepper.
- Bring to a simmer and allow mixture to cook down until sauce thickens, roughly 15-20 minutes.
Serve over steamed white or brown rice.
