Balsamic Chicken

Serves 2



Ingredients:

  • 1 small onion, coarsely chopped
  • 3-5 cloves garlic, smashed and roughly chopped
  • Olive oil
  • 2 boneless, skinless chicken breasts
  • Balsamic vinegar, to taste (I use about 1/2 cup)
  • 1 large can (28 oz.) diced tomatoes
  • 1 teaspoon Italian herbs
  • 1 basket (8 oz.) sliced mushrooms (optional)
  • 1 sliced green, yellow or red bell pepper (optional)
  • 2-3 sliced zucchini (optional)

Directions:

  • Saute onion and garlic in olive oil in a large frying or saute pan until onion is translucent. Be careful to not let the garlic burn.
  • Add chicken and continue to saute until chicken is mostly cooked through and slightly browned.
  • Add vinegar, tomatoes, herbs, mushrooms and bell pepper.
  • Bring to a simmer and allow mixture to cook down until sauce thickens, roughly 15-20 minutes.

Serve over steamed white or brown rice.
