Adobo-Style Chicken with Vegetables
Chicken and vegetables braised in a soy-vinegar sauce.
Serves 2.
Marinade:
- 1/2 cup vinegar
- 1/4 cup soy sauce
- 1/2 cup water or cicken broth
- 4 large cloves garlic, coarsely chopped
- 1 teaspoon black pepper
Other Ingredients:
- 2-3 pieces of chicken (I use boneless, skinless breasts and thighs)
- 1 small onion, coarsely chopped
- 1 handful mushrooms, sliced (optional)
- 1 sliced red bell pepper (optional)
Directions:
- Mix together ingredients for marinade in a bowl or tupperware container.
- Submerge chicken and vegetacles in marinade.
- Cover and chill for 2 hours or overnight. If the marinade does not cover the ingredients, stir occasionally.
- Pour marinade, chicken and vegetables into a pot.
- Cover tightly and braise over medium-low to medium heat for 45 minutes, or until chicken is cooked. Make sure the liquid boils for 10 minutes during the cooking.
Serve over steamed white rice.
